Hotel options in the DMZ
If you want a serious look at the DMZ, it's a good idea to take the 90 minute drive north from Hue, spend a night in Dong Ha and start your day from there. It'll make your DMZ exploration less rushed, and, depending on your plans, you can easily travel on to Phong Nha and Dong Hoi or back to Hue.
Dong Ha has a few basic hotels that are perfectly adequate for a night. Here are a couple of suggestions.

The best hotel in Dong Ha is as uninspired as all the properties established by Saigontourist across Vietnam. But it's a predictable standard and perfectly comfortable.
