Introduction
Vietnam's far north is a surprisingly tasty place to eat good solid Vietnamese country cuisine. The restaurant scene consists of small "quan" eateries where you'll perch yourself on a small stool while the food gets cooked up before your eyes. And if you're doing lots of walking, the hearty fare will go down very well. The locals will likely implore you to sample some rice wine too. Something to be done with restraint! Vegetarians may struggle since pork, goat and other meats are staples and everything seems to be cooked in animal fat. Steamed vegetables, tofu and rice perhaps?
