Pho Hoa Pasteur is a Saigon institution - one of the city’s oldest and most popular pho noodlesestablishments. There’s nothing flash here and it can’t be accused of changing with the times. Apart from the prices, it hasn’t changed much in a decade. Pho Pasteur has spawned copies all over the world so it’s worth making the journey down Pasteur St - one of a handful of colonial era street names that survived the post-communist cleansing - for a bowl of pho from where it all started. The Pasteur Institute, set up to continue the medical work of Louis Pasteur, remains in operation right across the road. It was established in 1891. The original building, with additions, is still standing.
